Lemon Garlic Salad Dressing

I ran out of my commercially made salad dressing a few weeks ago, and  panicked a little. Then I remembered that Lyn Genet had posted a salad dressing on her Facebook page and was able to save myself from certain disaster (not enough food to eat! Oh noes!). I know from experience that if I don’t eat enough healthy food, I WILL eat the junk. All of it. I like a lighter tasting salad dressing with a hint of sweet and set about doing some research. I found a few I liked and then branched out on my own. My Lemon Garlic Salad Dressing is one of my new favorites. Very simple and easy to whip up with what you’ve probably got on hand. Not only that, there are no unhealthy oils or preservatives in your salad dressing because YOU control the ingredients. Turns out I’m something of a control freak. Who knew?

Ingredients:

  • 4 tbsp. olive oil or avocado oil
  • 2 tbsp. lemon juice (I used concentrate)
  • 1 tbsp. maple syrup
  • 1 tsp. minced garlic
  • half a handful of fresh parsley (basil is good too)

Dump everything into your blender and blend till well mixed. I used my Oster Blender. Store it in a cruet or resealable container – like a canning jar. It’ll store in the fridge for a few days. Makes about 3-4 servings. Do you have a favorite homemade salad dressing?
