Veggie Stir Fry is courtesy of my Mom and is super simple and fast. Mom is doing The Plan, and I couldn’t be more proud of her search for health – her way. For folks like my Mom who, because of health need fast, easy, recipes with very little labor involved, this is for you. Even if you don’t have health issues, if you have hectic days where you need quick and healthy meals, this is perfect.

The Veggie Stir Fry cooks up very, very quickly. Ten minutes and it’s done – prep included! Chop some zucchini, some onion and some broccoli, stir fry it and you’re done. With the potassium rich veggies it’s awesome for weight loss, too. Mom used zucchini, broccoli and onions because they are super low reactive foods (meaning most people don’t have sensitivities to them) and because they’re nutrient dense. They’re main stays on The Plan. If you don’t have zucchini and broccoli on hand (though I can’t imagine that) use whatever veggies you have on hand. This is a delicious, super fast, nutrient dense dish that will help your body heal itself. For low carb people – Veggie Stir Fry works for you, too.

 

Ingredients:
  • 1 small zucchini
  • 1-2 crowns broccoli
  • 1/4 red onion
  • 1 tbsp. salted Kerrygold Grassfed Butter or ghee
  • 2-3 tbsp. extra virgin olive oil

Cut your broccoli into small florets. Rinse and set aside to drain while you slice up your zucchini and onion. The zucchini should be about the same size as a silver dollar. Keep the zucchini and onion separate for now. Melt your butter/ghee with 2-3 tablespoons extra virgin olive oil. Add the zucchini and let it brown a little. I use medium-high heat to get a nice brown color. Add the onion and stir. Cook for a minute or two. Remove from the pan and add your broccoli. If you need to, add more olive oil and butter/ghee. The broccoli seems to need more. Add your broccoli, stirring frequently for 2-3 minutes or until done. Add to the zucchinni and onion mixture. Pair with chicken, pork or steak.

NB: My Mom slices the chicken and cooks everything together. She fries up the zucchini and onion, removes them, and adds the chicken to soak up the yummy onion-y flavor. After the chicken is cooked through, add the broccoli. I just like to cook my chicken separately. It’s a miracle when I have different foods touching, lol.
