Carrot and Apple Salad has been a staple in my home for as long as I can remember. My Mom taught it to me just as her mother taught her. I have some wonderful memories peeling and grating apples and carrots with my Mom on Thanksgiving morning, watching the Macy’s Thanksgiving Parade. I’ve also been lucky enough to make this with my Grandmother. Daddy and Grandaddy traditionally went duck hunting while Mom and I cooked. Later we all gathered around the table, sharing our day with each other. There’s something very special about passing recipes down from generation to generation. A lot of things have changed since I was a little girl. My Dad passed on. My Grandfathers passed on. I’ve got my Mom and Grandmothers, and I’ve got my family. I feel very blessed to share these traditions with my family, and with you.

Carrot and Apple Salad isn’t just for Thanksgiving though, it’s a delicious anytime desert or side dish. Especially if you need a sweet that’s healthy, too. Ingredients:
  • 4-5 Granny Smith apples
  • 2 medium carrots
  • 2-3 tbsp. mayo, preferably homemade
  • raisins (optional)

Peel and coarsely grate carrots with box grater or food processor. Do the same with the apples. If you’ve got lots of juice, you can squeeze it out over the sink. Mix thoroughly (I use my hands). Add the mayo, tablespoon at a time until the mixture looks right. To add some additional color or texture, add a handful of raisins. Eat up!
