Thanks to Snowmaggedon 2016, I needed to come up with a Paleo Snow Cream. Luckily, I was able to make it between power outages. Nowadays we don’t lose power like we used to. When I was younger, if we got a storm like this it was pretty much guaranteed we’d lose power for 1-2 weeks. Now we only lose power anywhere for a few hours to a day or so (thank you, Linemen!). This time it was only twelve hours and with the cold temps outside we didn’t lose our groceries – we just carted everything outside that needed to be kept cold. If you gotta lose power, winter is the time to do it. We had our trusty wood stove to keep us warm, and our grill to cook food and coffee on. With the exception of freezing outside while watching the percolator for signs that the coffee was ready, it was kinda fun. I’m not very functional before coffee, and the wind was BRUTAL. Just like butter, coffee makes everything better.

Back to the snow cream. It was super easy to make once I managed to keep it from melting. While my 4 year old ran and played in the snow I gathered up what I needed to make the snow cream. I mixed the vanilla, coconut milk and maple syrup ahead of time in an attempt to keep the snow from melting too quickly.

My 4 year old wasn’t too sure about trying the snow cream, but he LOVED it. So yummy – and a guilt free dessert, too. Next up I’ll try adding some sliced bananas. Or using coconut cream instead of coconut milk. Or chocolate chips. So many choices, so little time.

Ingredients:
  • 5 cups clean snow*
  • 3/4 tsp. vanilla extract
  • 2/3 cup full fat coconut milk
  • 1.5 tbsp. maple syrup

Mix it up and eat it quickly!

*You may need more or less snow.
