I don’t know why but lately apple cider vinegar has been my go to ingredient lately. It gives a nice bite to whatever you marinate it in,  plus it tenderizes the meat. The Apple Cider Vinegar and Honey Roasted Chicken has a tangy, slightly sweet flavor to it. It’s also packed with anti-inflammatory turmeric and ginger-y goodness. This is pretty easy to fix with ingredients you probably already have, you only have to remember to set the chicken to marinate for a few hours before it’s time to cook.

The Apple Cider Vinegar and Honey Roasted chicken is also kid (and husband) friendly – all of my guys are picky eaters and no one had any trouble eating this up.

Ingredients:
  • apple cider vinegar
  • 1 tsp. turmeric
  • 1/2 tsp. ginger
  • drizzle honey

Lay the chicken flat in a ziplock, marinate the chicken in the apple cider vinegar, turmeric and ginger for at least a couple hours. Make sure all the chicken is laying in the vinegar. Squish the spices and vinegar around so that they mix. After marinating, place the chicken in your frying pan with a tablespoon of butter/ghee/coconut oil and brown on medium-high heat – reserve the marinade. Flip the chicken over and place the cover on your pan. Reduce the heat to medium-low and cook for five minutes. Add some of the apple cider vinegar and spice mixture and reduce. Cook for another five minutes. Take the cover off your pan, drizzle honey on the chicken and finish browning. Excellent with steamed broccoli and carrots, potatoes or Cinnamon Roasted Butternut Squash.
