So when you don’t eat bread any more, you search for ways to make burgers ever more tasty – especially when you don’t eat ketchup because you’re sensitive to nightshades and salt. Add kids to that and the never ending struggle to sneak veggies into their food and you get creative. Both my boys are picky (despite our best attempts at variety) and will turn their noses up at zucchini in almost any form (except zucchini bread, but who can blame them?) My oldest refuses to eat any veggie but raw carrots, but they eat my Nightshade Free Curried Chicken Burgers (complete with shredded zucchini) like they’re going out of style. These burgers are also baby led weaning friendly if you’re like us and on the search for nutrient dense easy baby/toddler foods. They’re super simple with ingredients you probably already have.

I used my Nightshade Free Curry Powder and all that lovely turmeric and ginger together with the shredded zucchini and carrots fight inflammation too. You can choose to skip the onion if you have a hubby like mine, I promise these are still tasty. My Nightshade Free Curried Chicken Burgers are low sodium (like all my recipes).  I like to pair this with some sliced avocado, steamed broccoli (because I’m a broccoli addict), cinnamon roasted butternut squash or french fries if you can tolerate potatoes.

Ingredients:
  • 1 lb. ground chicken
  • 1 shredded medium zucchini
  • 1 shredded small carrot
  • 1/4 cup chopped red onion
  • sprinkle black pepper
  • 1 1/2 tsp. Nightshade Free Curry Powder

Shred the zucchini and carrot with a box grater or food processor. Squeeze the water out of your shredded zucchini. Dump all the ingredients together and mix well with your hands. Make your hamburger patties and grill until done. Enjoy!
