Carrot, Apple and Beet Salad is a combination of two recipes, my Grandmother’s Carrot & Apple Salad and Lyn Genet’s Carrot and Beet Salad from The Plan. It’s super simple and full of yummy healthy veggies with a tart sweetness from a granny smith apple. I made this by request for my Mom, and thought it’d be good to include here. I’m always looking for a tasty way to get more nutrient dense veggies in my diet, and even I get tired of broccoli sometimes. It’s too easy to get in a food rut, and a little variety helps to keep our bodies happy.

Not only is Carrot, Apple and Beet Salad super easy, but it’s also baby friendly – a necessity in our house. My 15 month old loves to eat this, and I love that he’s getting an early start with healthy, real, whole food. My 4 year old has yet to be convinced that this is just as good as my Grandmother’s Carrot & Apple Salad. He’s currently on a raw baby carrots only food strike. 🙁

Beet’s are a great source of Folate, Magnesium, Vitamin C and Potassium, while the carrots are rich in Vitamin A, K, Potassium, Manganese, along with Folate, and B6. All are good sources of dietary fiber. For those who watch fat, or calories, this recipe has very little to worry about. This is a great side dish for just about anyone and works with a number of diets including Vegetarian, Paleo, Whole 30 and Clean Eating.

Ingredients:
  • 1 beet
  • 2 medium carrots
  • 2 granny smith apples

Peel everything.  Shred with a box grater or food processor all ingredients. Mix well. Eat! (Prepare to have purple hands for a little while. My 4 year old thinks it’s hilarious. Now if he’d just eat a veggie other than raw carrots.)
